The new regulations define mobile food units as fully enclosed mobile kitchens permitted to prepare, cook, and serve food. Among the key provisions, vendors are required to collect and remit hospitality taxes, ensure a staff member is present at the unit at all times, and refrain from operating in certain areas without city approval.
